Fast No-Knead Artisan Bread

Making homemade bread may sound labor and time intensive, but this recipe is quick and easy. The key is you need a dutch oven, or a thick cast-iron cooking pot with a tight-fitting lid.

Homemade bread is also way healthier for you, because you control what goes into it. Most store bought breads have no whole grains which means they are missing about a quarter of the protein and half to two thirds or more of their nutrients which are lost during the refining process. Additionally, when you make your own bread you can control the level of salt and fat. Most store bought bread has high sodium levels, contains trans fats and also has preservatives to give it more flavor and lengthier shelf life. Our recipe is just 3 ingredients and can be enjoyed fresh right out of the oven…


  • 3 cups all-purpose or bread flour (or half whole wheat flour)

  • 1/4 teaspoon yeast (active dry or instant)

  • 1 teaspoon salt

  • 1 1/2 cups hot water (about 125-130° F - NOT boiling)


  1. Combine flour, yeast and salt in a large bowl. Stir in water until it’s well combined.

  2. Cover with aluminum foil or lid and let stand at room temperature for 3 hours.

  3. After 3 hours dough will become puffy and dotted with bubbles. Transfer it to a well-floured surface and sprinkle dough with a little flour. Using a scraper fold dough over to shape into a rough ball.

  4. Place in a parchment paper-lined bowl and cover with a towel. Let stand on counter top for about 30 minutes.

  5. In the meantime place dutch oven with lid in a cold oven and preheat to 450° F.

  6. When oven reaches 450° lift the parchment paper and dough from the bowl and place into the duch oven. Cover and bake for 30 minutes.

  7. After 30 minutes, remove lid and parchment paper. Return, uncovered, to oven and bake 10 - 15 more minutes. Let it cool at least 15 minutes before slicing.
