Cilantro Chutney


1 bunch of fresh cilantro
1 freshly juiced lime
1 tablespoon fresh ginger, peeled 
1 tablespoon olive oil
1/3 cup graded coconut /or/ 1 tablespoon maple syrup
1/2 teaspoon salt
1/2 tablespoon cumin seeds
1/2 jalapeno or thai chili (optional)


In a blender, combine cilantro, lime juice, ginger, olive oil and salt and blend into a creamy sauce. Mix in shredded coconut and cumin seeds.
