Vegan Chai Oatmeal

Warm your belly and soul with this aromatic wholesome favorite with a lil spice:


2 Tbsp coconut oil
12 crushed cardamom pods (or ¼ tsp ground cardamom)
8 whole cloves (or ⅛ tsp ground cloves)
½ tsp ground cinnamon (or 6 cinnamon sticks)
2 tsp fresh ginger graded ginger (⅛ tsp ground ginger)
1 ½ cups oats
Pinch of saffron
2 ½ cups almond milk
1 ½ cups water
8 pitted dates chopped


Place oil in pot on medium heat. Once oil is hot, add cardamom pods and let toast for 15-30 seconds. Add cloves and let toast for 15-30 seconds. Then add cinnamon and ginger and mix. Wait 15 seconds or until aroma is released. Add oats and saffron and mix. Let toast for about 1 minute. Add almond milk first and stir. Then add water and chopped dates. Lower heat and simmer covered for 10 minutes.

Remove from heat and enjoy warm. Serves 2. Add ½ teaspoon of maple syrup for some sweetness.
